Kestrel Keto Pudding (5 Ingredients, 3 Minutes)

Description:

This smooth, satisfying keto pudding takes just a few minutes to prep — and only five clean ingredients. It’s dairy-free, egg-free, nut-free, chocolate-free, and added-sugar-free, making it perfect for nearly any dietary need. Made with real coconut milk and fiber-rich carob, this pudding thickens naturally with konjac root (glucomannan). Let it chill, and enjoy a creamy treat that fits your macros and your schedule.

Why You’ll Love This Pudding

  • ⏱️ Under 5 minutes prep – no cooking required
  • 🌱 Real food ingredients – nothing artificial
  • 💪 Keto & low-carb friendly – with high healthy fats
  • 🍫 Rich, chocolate-adjacent flavor – thanks to carob
  • 🚫 Free from dairy, eggs, nuts, gluten, chocolate, and added sugars

🥄 Ingredients

  • 2 cans (13.5 oz each) full-fat coconut milk
  • ¼ cup ground carob powder
  • 1 teaspoon glucomannan powder (konjac root)
  • ¼ teaspoon monk fruit powder (sweetener)
  • ¼ teaspoon salt (optional)

Optional: Add a few drops of vanilla extract or a pinch of cinnamon for extra flavor if tolerated.

🍮 Instructions

  1. In a bowl, whisk together the carob powder, glucomannan, monk fruit, and salt until fully combined.
  2. Add the coconut milk one can at a time and mix well until smooth.
  3. Pour into 4 serving cups, rammekins, or jars.
  4. Chill in the refrigerator for at least 15 minutes to set.
  5. Serve as-is or with your favorite keto topping.

🔁 Tips

  • If the coconut milk has separated, warm it and mix it before adding.
  • You can easily halve the recipe if you want less, just divide quantities by 2.
  • Carob tends to clump, which can lead to dark spots throughout the pudding if you do not sift it. This is actually an interesting visual result and does not detract from the flavor.
  • If you can't wait, you can eat right away but the texture is better after setting. If you warm the coconut milk before mixing you can treat it like a thick hot chocolate drink for a different experience.
  • You can make other flavors besides carob, but I find that the carob really hides the monk fruit aftertaste. Since carob is high fiber, you might need to increase the glucomannan to compensate if not using carob.
  • Store covered in the fridge for up to 4 days. Pudding may thicken further as it chills.
